I'm in the same boat, my aunt's getting married in two weeks and I don't think we've gotten her anything yet...
Are you looking for something expensive or would something kinda personal be better? I really don't know about wedding gifts!
(Or is your point you don't want to get them the blender off their registry?)
If that's the case here are a few suggestion. Maybe all of these are dorky but:
1) wine of the month club (or some food/cheese/something club)
2) pay to get the bouquet preserved. (some friends did that for me and I love it. It's my bouquet in a glass box with our invitation in the background.)
3) If she's changing her name but maybe some sort of sign or plaque that says "The Browns" (or whatever their last name is) that they could hang outside their house or something.
4) A donation in their name
5) Again if they have a house a tree or something they could plant that would grow. Be all symbolic.
